Making mashed potatoes have never been easier than with this pesto mashed potato crock pot recipe. Only six ingredients and 4 steps to a delicious side dish!

Oh how I love my crock pot! I have so many delicious main dish crock pot recipes {see all my crock pot recipeshere!}, but once I learned to use it to make side dishes I love it even more! I have actually been thinking about getting two. Is that crazy?

Either way, if you are a pesto lover, you HAVE to try this pesto mashed potato recipe. To die for. And ridiculously easy to put together. These have become a staple on our Sunday dinner rotation. They are super easy for me, and the whole family devours them, so win -win!

To make them, pull out your slow cooker. I have one like this with the basic timer, I love that the lid latches on so I can take it to pot lucks with no spills, but I have been dreaming about getting this wifi crock pot so I can activate it on the go for perfect dinner timing! Isn’t technology great?

Pop your potatoes, garlic, and chicken broth in the pot and set it for 4 hours on high (or 6 hours on low.)

About 30 minutes before the timer goes off remove the lid and add your cream cheese and butter, but do not stir, just recover. This will allow the butter to melt and the cream cheese to soften so it blends perfectly throughout with out getting lumps.

You can use low fat cream cheese, but fat free doesn’t melt well so avoid that.

Once the timer goes off, use a potato masher to mash the potatoes and garlic and mix butter and cream cheese through out.

Once everything is combined, add the pesto and mix until combined.

Serve hot and enjoy!

We love eating these as a side for chicken or steak, but also as a bed to put anything saucy on. The are just as delicious on their own as they are combined with a little cream sauce… recipe coming for that soon!

Ingredients

  • 3 Lbs Gold Potatoes
  • 4 Garlic Cloves
  • 1 Cup Chicken Broth
  • 1/2 Cup Butter
  • 8 oz Cream Cheese
  • 1 Cup Prepared Pesto

Instructions

  • Clean the potatoes and place them in the crock pot with the chicken broth.

  • Cook on high for 4 hours or low for 6 hours.

  • minutes before the end, put the butter and cream cheese on top of the potatoes and close the lid for the remaining time (do not stir.)

  • Once the time is complete, use a potato masher to mash and combine the potatoes, garlic, broth, butter and cream cheese.

  • Stir in pesto and serve hot.

  • Enjoy!

    I love my crock pot too, and I think this would be a big hit at a potluck. I’ve pinned for future use. Pesto is practically a food group in my house:)

    Can you use red potatoes & what is pesto & where would I get it at?

      You can definitely use red potatoes but the finished product might not be quite as green as when you use yellow. Pesto is is a sauce made from basil, garlic, olive oil, pine nuts and parmesan. It is absolutely delicious, if you have never had it! You can find premade pesto near the refrigerated pasta in most grocery stores or I usually buy mine at Costco or Sam’s. I think their’s tasted the most like fresh!
