I used to almost always keep store-bought Bisquick mix or canned biscuits on hand to make an easy batch of biscuits in a pinch. The problem is that neither are very healthy! Recently I made my own homemade pancake mix to get around this problem; then I thought, why not just make my own homemade Bisquick mix?

This homemade biscuit mix just makes life way more convenient. There's no need to mix up a fresh batch of biscuits every time I need them. Simply dump it into a bowl, drop in a splash of milk and mix everything up. Now you have the best biscuits with none of the toxic ingredients that are in so many store bought baking mixes!

One of my favorite ways to use homemade biscuits is by making these quick and easy strawberry shortcakes. Did you know that you can even use biscuit dough to make biscuit cinnamon rolls?

Ingredients & Substitutions Notes

This recipe uses pretty simple ingredients, so you probably already have everything on hand…

  • All-Purpose Flour – I recommend using regular all-purpose flour for this recipe. If you want to make this a gluten-free biscuit mix, substitute 1:1 with a cup for cup gluten-free all-purpose flour. You may also need to add a pinch of xanthan gum. If you go this route, be sure to check all of the other ingredients over to ensure that they are truly gluten-free. Or you can use my recipe for soft gluten-free drop biscuits!
  • Baking Powder – The baking powder in this recipe is responsible for giving the biscuits good rise in the oven. This makes for the super soft and fluffy homemade biscuit we all love!
  • Sea Salt – Of course you can usetable salt, but I love the flavor of this“real”Redmond sea salt.
  • Unsalted Butter – I recommend usingunsalted butterfor this recipe, but if you have to usesalted butter, just be sure to reduce the actual salt in the recipe by about 1/8 teaspoon. Whether you use salted or unsalted, it's important that you use cold butter, as it will tend to leave behind tiny chunks throughout the biscuit dough. Every single one of those tiny butter chunks will melt and turn to steam as the biscuits bake, leaving behind little pockets of air, which results in the flaky layers that are so desirable in a good batch of fluffy biscuits. If the butter is too warm, it will melt as you mix everything together, eliminating the desired air pockets and ultimately resulting in a heavy, dense biscuit that nobody will want to eat!

How to Make Homemade Biscuit Mix

In the steps below, I'm going to show you how to make this recipe the traditional way using a pastry blender, and I'm also going to show you an alternative method using the food processor. Feel free to use whichever method you prefer!

Pastry Blender Method

  1. To make homemade Bisquick substitute using a pastry blender, whisk together the flour, baking powder and salt in a large mixing bowl until well combined.
  2. Next, you'll want to “cut” the cold butter into the dry ingredients with a pastry blender. If you don't have a pastry cutter, you can also just use the flat side of a dinner fork to sort of mix the butter into the dry ingredients.
  3. Once you've mixed everything together well, your biscuit mix is ready to go! Next I'll show you how you can make it in the food processor, or you can scroll down below to find out how to store it.

Alternative Food Processor Method

  1. Start by adding the flour, baking powder and salt to your food procesor.
  2. Pulse the dry mixture until well combined.
  3. Add the cold butter and pulse again to incorporate, until the mixture resembles coarse cornmeal.

How to Store Biscuit Mix

Homemade biscuit mix stores best in an airtight container or mason jar and in the refrigerator. Stored this way, it should keep for up to 3 months.

Alternatively, you can also freeze homemade biscuit mix. Simply place your biscuit mix into an airtight container or freezer bag, and into the freezer for up to 8 months!

Easy Homemade Biscuit Recipe From Homemade Biscuit Mix

Now that you've made your very own biscuit mix, let's use it to make the best homemade biscuits!

Before getting started, grease up a large cookie sheet with nonstick cooking spray; then preheat the oven to 400ºF. Don't have cooking spray? No worries, just line the cookie sheet with parchment paper.

  1. Use a measuring cup to add 1 1/2 cups of homemade biscuit mix and 1/2 cup of milk to a large bowl, mixing together.
  2. Once a soft, sticky dough starts to form, knead the biscuit dough until everything is well combined.
  3. On a lightly floured surface, use a rolling pin to roll the dough out to about 1/2 inch thick, and then cut your biscuits out with a round biscuit cutter or a large round glass cup. Take care not to twist the biscuit cutter as you cut each biscuit out, but press straight down instead; twisting the cutter can damage the structure of the biscuits and subsequently affect how high nicely they rise.

TIP: Alternatively, you can skip having to roll out the biscuit dough by making drop biscuits. Once you've mixed everything together, just drop the biscuit dough by the tablespoon onto your cookie sheet. A cookie scooper works really well for this!

Finally, transfer each biscuit to the baking sheet that you greased up in the first step. Bake them at 400ºF for about 7-9 minutes, or until the tops of each biscuit are golden brown.

Serve your homemade biscuits with a lathering of butter and a spoonful of your favorite jam or jelly. Personally I'm a sucker for flaky biscuits served with a helping of my favorite homemade peach jam. Or you can just serve them plain with a glass of milk!

Expert Tips and Recipe FAQ's

Why aren't my biscuits rising?

The most common reason for biscuits not rising is old baking powder. Believe it or not, baking powder can expire; in fact, I once had a can of baking powder that went bad before the expiration date! Baking powder is the sole leavening agent for homemade biscuits, so buy it as fresh as possible.

Why are my biscuits tough?

Tough biscuits are usually caused by overworking the dough. Take care not to over-mix or over-knead your biscuit dough, and roll it out gently so as to prevent the gluten in the flour from strengthening too much, which causes tough, rubbery or hard biscuits.

On the other hand, tough biscuits can also be caused by adding too much flour. As I stated in the instructions for this recipe, your finished biscuit dough should be fairly wet and sticky. Don't be tempted to add more flour; this will result in a dry, hard and tough biscuit, which is not desirable.

Finally, it is possible that your butter is melting prematurely as you mix up your biscuit mix or biscuit dough. Use COLD butter, and be sure to store your biscuit mix in either the refrigerator or freezer until you are ready to mix up the biscuits; I can't stress this enough. You want an even amount of tiny butter chunks spread all throughout the finished biscuit mix. Once you've mixed up your biscuits and set them into the oven to bake, that butter will melt and evaporate, resulting in little air pockets all throughout the biscuits. This is what gives them the soft, flaky texture that we all know and love.

Why are my homemade biscuits dry and crumbly?

This is most likely because you over-baked the biscuits. As stated in the instructions, you want to bake your biscuits at 400ºF for 7-9 minutes, but be sure to keep an eye on it! Some ovens vary in the amount of heat produced, so yours may finish baking sooner than that, or they may take longer. You can tell that your biscuits are done when they've gained a golden-brown color on top.

  • Lightly spray a cookie sheet with non-stick cooking spray, and preheat the oven to 400ºF.

  • Start by combining 1 1/2 cups of homemade biscuit mix and 1/2 cup of milk* in a large mixing bowl.

  • Once a soft, sticky dough has started to form, knead the mixture by hand until everything is well combined.

  • Once everything is mixed together well, turn the dough out onto a lightly floured work surface, and use a rolling pin to roll it out to about 1/2 inch thickness.

  • Cut your biscuits out with a round biscuit cutter or glass cup, and place each biscuit onto the baking sheet that you already greased up.

  • Bake at 400ºF for 7-9 minutes, or until the tops are golden brown.

  • Serve and enjoy your homemade biscuits lathered in butter with your favorite jam or jelly!

*Although I prefer whole milk, you can use skim milk, 2% milk, whole milk, or whichever you have on hand.
