I use a small food processor to make the crust. If you don’t have one, I can’t recommend it enough because it’s such a time saver in the kitchen.

If you don’t have one yet, you can use a ziplock bag and a rolling pin to crush the graham crackers.

Also, a good set of spatulas. I use the silicone ones and they are perfect for getting every last drop of cheesecake from the bowl.

FAQs

Why do my mini cheesecakes fall in the middle? ›

Overbeating, Overmixing, or Undermixing Your Cake Batter

Too much air and your cake will collapse because it simply can't hold onto all that air. Overbeating can add too much additional air and/or large air bubbles which the cake can't support, causing it to collapse in the oven.

How long to thaw cheesecake bites in fridge? ›

It's best to thaw your cheesecake in the refrigerator for at least 6 hours or, ideally, overnight.

What happens to cheesecake when the eggs are added too soon or it is over mixed? ›

Make sure to add eggs one by one on low speed and mix until just combined. Over mixing the eggs will incorporate too much air into the batter, which will result in the cheesecake deflating and possibly cracking when it comes out of the oven.

Why did my no bake cheesecake collapse? ›

Too much liquid - the batter should not be runny so maybe you could reduce the liquid content just a little. Too much sugar in the cake can also sink the cake. In your recipe you use 2 cups of sugar for 2 cups of flour... seems a bit much?

How do you know when mini cheesecakes are done? ›

Bake until the edges are set and the centers only slightly jiggle, about 18–20 minutes. Set the pan on a wire rack and allow cheesecakes to cool at room temperature for 30 minutes, then transfer to the refrigerator and chill for at least 2 hours and up to 1 day.

Can you eat 7 day old cheesecake? ›

And, according to the USDA FoodKeeper chart, cheesecake should be consumed within five to seven days after baking—or opening a pre-bought cheesecake.

How long can cheesecake bites sit out? ›

When you have cheesecake that's already baked and chilled, the absolute max time you could let it sit out to avoid the USDA's "danger zone" is two hours.

What happens if you don't defrost cheesecake? ›

7. Failing to set aside enough time for thawing the cheesecake. A whole cheesecake will need considerable time to thaw — and not at room temperature, please, or you'll risk bacteria forming.

Should you beat eggs before adding to cheesecake? ›

Now, here comes the trick to my cheesecakes that make them so much different from most others. I separate my eggs and beat the whites before folding them into my cream cheese mixture. This gives the cheesecake a much lighter texture than most cheesecakes.

What does adding an extra egg to cheesecake do? ›

Making it lighter: If you don't like the thick and heavy cheesecake then I would recommend adding more eggs if you want to keep the classic taste or adding sour cream or heavy whipping cream if you like how those change the taste.

Can you fix a cheesecake that didn't set? ›

You can fix a runny cheesecake mixture the same as the others – with a setting agent – or freezing to make an ice cream mixture. Sometimes the cheesecake can be too thin if a chocolate has melted the mixture for example – and this is also solved this way.

Should I cover no bake cheesecake in the fridge? ›

Cover tightly with plastic wrap or aluminum foil and refrigerate for at least 6–8 hours and up to 2 days. For best results, 12 hours is best. I chill mine overnight. The longer refrigerated, the nicer the no-bake cheesecake will set up.

How do you keep a no bake cheesecake firm? ›

Your solution is to put gelatin into your mix for that firmer texture. The texture you have in the picture is how a no bake cheesecake will look.

How do you stop a cake from collapsing in the middle? ›

Cake sinking after baking can be prevented by ensuring the oven is preheated correctly, using the right size of baking tin, avoiding opening the oven door too early, checking for doneness with a toothpick, and allowing the cake to cool gradually in the oven before removing it.

What to do with sunken cheesecake? ›

The only thing that might be affected is the texture (it might be slightly coarse or a tad on the dry side – for a cheesecake), but I can guarantee it will still be delicious. There is only 1 very simple thing you have to do with your cracked (or sunken) cheesecake and that is: … cover it up with a topping!

What causes a cake to drop in the center? ›

The pan is too small. There's too much liquid. Opening the oven or moving pans during baking. Oven temperature is too low, or cake isn't baked long enough.
