Ingredients
- 4 tbsp 4 tbsp almond flour or hazelnut flour
- 2 tbsp 2 tbsp cocoa powder
- 4 tbsp 4 tbsp granulated erythritol
- 1 tsp 1 tsp baking powder
- ½ tsp ½ tsp vanilla extract
- 2 pinches 2 pinches salt
- 2 2 egg, beateneggs, beaten
- 3 tbsp 3 tbsp melted coconut oil or butter
- 1 tsp 1 tsp coconut oil or butter for greasing the mugs
- ½ oz. (12⁄3 tbsp) 14 g (25 ml) coarsely chopped sugar-free dark chocolate (look for stevia, erythritol, and/or monk fruit in the ingredients)

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Microwave (7 minutes total time)
Combine dry ingredients in a small bowl. Add eggs, melted coconut oil or butter, and chocolate. Mix until smooth.
Equally divide batter into four, well-greased coffee mugs or microwave-safe ramekins.
Microwave on high for 1-1 ½ minutes (700 watts). Remove and let the mug cakes cool for one minute.
Oven (20 minutes total time)
If you don’t want to use your microwave, you can bake the muffins in the oven. In fact, if you have the time, we recommend that you do. Microwaves vary in capacity and the results depend upon the size of your mug, etc.
Preheat your oven to 350°F (175°C).
Combine dry ingredients in a small bowl. Add eggs, melted coconut oil or butter, and chocolate. Mix until smooth.
Place liners in a muffin pan, and fill them halfway.
Bake for about 12-14 minutes or until springy when touched gently in the middle.
Tip!
Keep in mind that the mug cakes will initially swell to double their size when baking in the microwave, then they will shrink back down. Fill the mug to a maximum of two-thirds.Special occasion? Whip up some keto buttercream and pipe a nice rosette on top. These muffins can also be decorated with berries and whipped cream.

just tried these without the chocolate chips as I didn't have any - did in the microwave (800w) for 1min 30 and left for almost a minute before turning out. Lovely treat - need a little cream with them - didn't have any of that either (!)

I keep trying to print your wonderful recipes and for some reason when I hit the print button on your page - all recipes are 2 pages with the first page being just the photo of the meal at the top and then 2-3 lines of the recipe at the bottom of the page - then the rest is on page 2. This is a recent result for me ... never had this issue before. Any advice would be appreciated. I LOVE PRINTING YOUR RECIPES BUT THIS ISN'T WORKING! Thank you.

IMPORTANT NOTE! Do not be confused at the microwave time. I thought it said 7 minutes and I burned my first batch. The 7 minutes is total time for prep., etc.

Lovely, and so handy for when cravings strike.
I subbed the cocoa powder for chocolate collagen powder and added whey protein isolate and it worked well. Looking forward to trying it with the hazelnut flour.

Wow! I made the recipe as printed, oven version. What a nice surprise. Flavor and texture were very satisfying. I'm interested in making the spice version someone mentioned above. Also, adding nuts or peanut butter sounds yummy to me. Thanks for this.

Perfect for halloween cup cakes, made these in the muffin (cupcake pan). Made the Buttercream iceing noted in notes. Added pumpkin spice to the butter cream with orange for some, green for some, food coloring. Decorated with spiders. No one believed they were only a total of 3 carbs (2 for cupcakes and 1 for iceing).
