How to Make Maple Roasted Cantaloupe
Transforming cantaloupe into a sweet treat is a quick and easy three-ingredient recipe. All you need to do is place cut up pieces of cantaloupe on a parchment paper-lined baking sheet.
Toss the cantaloupe pieces with maple syrup and vanilla extract and bake. Adding maple syrup gives the melon an almost caramelized coating and the vanilla helps to amp up the flavours of maple syrup, making it sweeter and richer.
After 20 minutes in the oven, you have a healthy, sweet treat. When you take a bite, each piece is so soft it almost melts in your mouth. Yum!

With a ripe cantaloupe it’s delicious with or without maple syrup. With a melon that “just misses” its sweet spot, the syrup (or a little brown sugar) makes it perfect. Thank you!

This sounds delicious. Do you know if a sugar-free maple syrup would work? Or would it taste okay without using syrup?

Thanks Sheila! I haven’t tried it with sugar-free maple syrup, but I’m sure it would be delicious. Without any maple syrup, it would still be tasty, just not as sweet. Let me know how it turns out! 🙂
